Paleo carrot cake

Ingredients:

To the cake:

  • 35 dkg shredded carrot,
  • 3 eggs,
  • 130 ml honey,
  • 10 dkg melted coconut oil,
  • 1 tsp vanilla extract,
  • 20 dkg almond flour,
  • 2 tsp ground ginger,
  • 1 tsp ground ginger,
  • 0,5 tsp nutmeg,
  • 1 tsp baking soda,
  • 10 dkg walnuts.

For the icing:

  • 1 can full fat coconut milk refrigerated for 1 hour (400 ml) (or 2 can cocomas),
  • 3 tbsp honey,
  • 2 tsp vanilla extract,
  • 2 tbsp melted coconut oil.

Paleo Pumpkin Cinnamon Rolls

Ingredients:

  • 2 1/4 Cups Blanched Almond Flour,
  • 1 1/4 Cup Tapioca flour,
  • 2 Tsp. Baking Powder,
  • 2/3 Cup erytritol,
  • 3 Eggs,
  • 1 1/3 Cup Pureed Pumpkin,
  • 2 Tbs coconut oil,
  • 1 Tbs cinnamon,
  • 1 1/4 Tsp powdered Ginger,
  • 1/2 Tsp Himalaya salt,
  • 2 1/2 Tbs Psyllium Husk,
  • 2 Tbs Flax Meal.

Filling:

 

  • 1 Tbs coconut oil,
  • 1/2 Cup erythritol,
  • 3 Tbs Cinnamon,
  • 2 Tsp Powdered Ginger.
